Summer time brings all sorts of fun. With all the summer fun comes friends and family getting together. We had some friends over for swimming and dinner a few nights ago. One of our dear friends has a gluten allergy and a severe one at that. I was trying to think up a gluten free dinner recipe. I had some leftover salmon and some rice. This recipe is for a full sheet pan, can be cut in half too.

Ingredients for sushi rice: 
•3 cups of calrose rice Botan brand or any sushi rice 
•4 cups of water 
•2 tsp. salt 
•1/3 cup of rice vinegar 
•3 tbsp. sugar 
•3 tbsp oil 

For the baked salmon: 
about 2.5 pounds of skinless salmon 
1/2 cup of your favorite teriyaki sauce. 

For layering your cake: 
about 2 ripe (not mushy) avocados 
toasted sesame seeds
sliced red onions 
sliced Serrano chilis 
Cilantro 
spicy Mayo 

Directions:
* Preparing the Rice:
 * Wash and rinse the sushi rice until the water runs clear, approximately 4 times.
 * Place the rinsed rice in a pot and add water and salt. Cover and cook over medium heat.
