Perfect for literally anytime 🫶 • For the crumble: 1/2 cup raw pecans 5-6 dates 2 oz feta cheese Handful arugula 1/2 tsp salt 1/2 tsp pepper Zest of 1/2 lemon • For the sweet potatoes: 4 medium sweet potatoes, halved Olive oil Salt • Optional tahini-balsamic: 2 tbsp tahini 1 tsp maple syrup 1 tsp balsamic vinegar Pinch salt 1 tbsp water *whisk to combine* • 1️⃣ Preheat the oven to 425.2️⃣Drizzle olive oil on the bottom of a large sheet pan, season with salt and place the sweet potatoes face down.
