Camp stove cooking - Episode 3

Serves 4-6
The success of this easy recipe is reliant on time and patience. The spiced flavour and melting texture are nurtured by cooking slowly and basting frequently. They can also be made up to 2 days in advance as they are excellent served chilled.

2 cups well flavoured red wine that is good enough to drink
2 cups water
3-4 pieces of lemon skin removed from the lemon with a potato peeler
1 cinnamon stick
1/4 teaspoon cardamom seeds
1 cup sugar
6 pears, stalk on

Put everything except the pears into a wide saucepan and bring to a gentle boil, stirring to dissolve the sugar.
Peel the pears, adding each to the wine mixture as it is peeled so they don’t go brown.
