All you need is a big jug of cottage cheese, eggs and oats (plus a bit of salt and baking powder, but we’re not counting those 😆). We’ve already made them multiple times, and they’re definitely going on repeat all summer. Packed with protein and boasting a soft (but not soggy) crumb, they’re naturally gluten-free and perfect as GF scones. You might have seen variations of this viral protein bread all over social media, here’s our take on it:

PROTEIN BREAD
• 500 g cottage cheese
• 5 eggs
• 450 g rolled oats
• 1 tsp salt
• 1 tsp baking powder

Instructions:
1. Preheat the oven to 200°C/400°F.
