Looking for a solid sourdough bread schedule for baking? Or just not sure how long you should proof your sourdough bread on the counter, how long to put it in the fridge, stretch and folds, etc?  Today on The Spritz Girl Blog, I'm sharing the full schedule that I follow when baking sourdough bread. Mandy | self-taught sourdough baker on Instagram: "Several of y’all have asked me How I Avoid Discarding. So here you go!  Please keep in mind that I bake 2+ times a week so I’m constantly using + rotating my starter. If you are not baking consistently you might have to discard.   Also remember to try and keep at least 25g back up starter in the fridge (just in case!), so if your refrigerator stash gets low, I recommend feeding it and putting it back into the fridge (I usually let it rise for a few hours prior to putting back in the fridge).  Difference between starter vs discard⬇️  Discard is unfed/inactive starter. Sourdough discard is after the starter has peaked and it starts to come down again- I just plop it in the fridge and feed it again when I’m ready to use it!
