Dough: - 1 Large Overripe Banana - 3/4 Cup Coconut Yoghurt - 2 & 1/4 Cup Flour  Filling: - 4 Dates - 1 Tbsp Almond Butter - 2 Tsp Cinnamon - Pinch of Salt  Icing: - 3 Tbsp Coconut Yoghurt - 1 Tbsp Oat Milk - 1 Tsp Vanilla Extract  1. Preheat oven to 180°C. 2. Combine all dough ingredients and mix until a dough forms. If the dough is too wet, add more flour and if the dough is too dry, add more yogurt. 3. Lightly flour a surface and knead the dough until smooth. Roll out to a thin rectangle shape. 4. Mash together the filling and spread evenly over the dough. From the larger end, roll the dough tightly and slice 8 rolls. 5. Bake for 20-25 minutes or until golden. 6. Mix the icing ingredients and drizzle over the rolls. Dough:
 • 2-3 tbsp yogurt (I used greek)
 • 1 tbsp maple syrup
 • 1/4 cup self rising flour (or flour + 1/2 tsp baking powder)

Filling:
 • 1 tsp melted odorless coconut oil
 • Cinnamon + brown sugar

Method:
 • 1. Mix and knead all the dough ingredients until a dough forms (u may need to add more flour)
 • 2. Roll out the dough into a strip on a floured surface
 • 3. Brush with coconut oil
 • 4. Press the cinnamon & brown sugar mixture into the dough
 • 5. Cut the dough into two strips vertically
 • 6. Roll up the dough until a cinnamon roll forms
 • 7. Place in mug/ramekin and microwave for 90-120sec
 • 8. I topped the cinnamon roll with icing
