I’ve been playing around with this recipe for around six years, and finally made a few changes that I think make it even better and even richer in fibre. I originally used a Thermomix recipe for this bread, but find that using psyllium husk as in the life changing bread gives a MUCH better result. The key changes are a longer sitting time before it goes into the oven and the elimination of the raising agents. I like to grind the oats flax and chia seeds together before combing all the other ingredients. This bread is probably the only bread recipe you will ever need. The best part is that when it is sliced up, each slice contains 9g fibre and 9g protein, so it’s a great way of helping you achieve your 30g recommended amount of fibre a day. And with 7 plant points it also helps you reach your 30+ plants a week. Recipe, makes 10-12 slices 100g golden flaxseeds 40g chia seeds 150g rolled oats 50g walnut halves 50g hazelnuts or cashew nuts 50g sesame seeds 75g pumpkin seeds 75g sunflower seeds 1 teaspoon sea salt 25g psyllium husk 350ml filtered water 2 tablespoons extra virgin olive oil Method 1. Add the oats, chia and flaxseeds to a blender and process until you have a flour. 2. Transfer to a bowl and add all the other ingredients. I always get questions about the psyllium husk I use, so I have put a link in my Amazon shop to the exact one I use. I use the flakes rather than the powder. 3. Mix well until it forms a thick dough. Add a little more water if too dry. 4. Line a 1lb ( small) loaf tin. You can use a 2lb loaf tin for a flatter loaf. 5. Spoon in the mixture and flatten. Sprinkle with extra seeds if you like. Leave to sit for around 3-4 hours to thicken and allow the psyllium to absorb the water. 6. Turn the oven on to 180°C fan. When hot, add the loaf and cook for 75-90 minutes until cooked through. If you are not sure if it is quite cooked you can turn off the oven and allow to cool in the oven. Allow to cool completely before slicing. This cheese and leek version will turn even the most boring soup night, into the best dinner ever! This is not like other bread. There's no kneading and no proving. It's in the oven in less than 10 minutes, filling your kitchen with the most incredible smells... I've written up the recipe for this below and I would love to know if you're going to give it a try! A x Feeds 4-6 500g self raising flour 1 tsp baking powder 1 tsp dried parsley 2 leeks finely sliced 110g butter or margarine 175g grated cheddar 200ml water A little milk to brush on top Heat the oven to 200C (fan) Place the sliced leek in a pan with a drizzle of oil. Fry for five minutes until soft. Place the flour in a large mixing bowl. Stir in the baking powder, dried parsley (you can use oregano or mixed herbs if you prefer) and salt and pepper. Add the butter or margarine. Use your finger tips to rub it into the flour until it disappears. Mix in the grated cheddar and leeks until evenly dispersed. Add the water. Use your hands to mix it together until you have a smoothish dough. Place the dough on a large greased or lined baking tray press it down until you have a thick circle roughly 20cm across. Brush the top of the loaf with a little milk. Bake in the oven for 30 minutes or until golden brown and cooked through. If the top is cooking too quickly, just cover it on foil for the last minutes of baking. Once risen, transfer the dough to a lined high sided baking tray or loaf tin. Try and use a tray that is no bigger than 30x20cm. For a higher loaf, use a log tin.
