Shrimp Caprese
If you scroll on TikTok or Instagram reels, there is no way you haven’t seen the Feta Cheese pasta phenomenon. The original recipe has a brick of feta in the center, but I found it to be WAY too salty for my palate. I added the components of caprese flavors as well as some shrimp as a protein, and it was absolutely delicious!

St. Patrick’s Day is around the corner and has us craving some fish and chips! While the Irish Pub, deep-fried version are delicious, these air fryer or baked crispy cod filets will also have you feeling like you struck a pot of gold!

One-Pan Pasta
You can take your pick of whether to include meat or not, but either way, it’s delicious. We paired ours with lobster tails (call us fancy), but it would also pair well with chicken, shrimp, scallops, or salmon. I prefer the rich flavor chicken broth brings to this dish. While this isn’t the traditional way pasta is cooked, it results in super tender noodles that soak up all the flavors of the dish.

Salmon Patties
We love these with buttered potatoes and green beans or with soup beans, cornbread, and wieners and kraut. Besides being a great budget-friendly protein, canned salmon has great health benefits too! It’s high in protein, rich in omega-3 heart healthy fats, high in potassium and B vitamins…just to name a few. My daughter hadn’t eaten these until the night I made them last week. Let’s just say, she liked them so much that she had 3. 4oz costs a mere .81 cents!
