I’ve had some success before adding a weighted tray on top but it was generally quite inconsistent - overcooked on one side, uneven weight distribution etc etc. This takes out all the guess work and I was v impressed (and I wish I was being paid to say that 🤣) It was a bit of unknown on how long to cook it so the first test was…dark…but a few more tests and I got it dialled in! Matt Adlard on Instagram: "Caramel 101! I can’t tell you the number of times I messed up caramel when I started baking. It would crystallise or end up really thick and solid after letting it set. So hopefully this guide can help solve some of those issues if you’ve struggled too! We’re looking at wet vs dry caramels (which are great for sugar decorations), my go to caramel sauce recipe which is perfect to use in cakes or drizzled over ice cream. And then finally chewy caramel sweets. Now I don’t love caramel sweets 😅 but this is a fairly standard recipe for making them!
