- 1/2 tbsp butter
- handful spinach
- diced red pepper
- diced zucchini 
- 2 tbsp shredded Colby Jack 
- 1/2 avocado
- 2 eggs
- salt & pepper
- hot sauce 

On a pan set to medium heat, melt butter and sauté zucchini and red peppers 3-4min, add spinach & cook until wilted. Add eggs and turn heat to low. Add salt, pepper and cheese. Let it cook slowly, fold and serve. Top with avocado and hot sauce.
