5-Fitaza (EC 3.1.3.72, 5-phytase) je enzim sa sistematskim imenom mio-inozitol-heksakisfosfat 5-fosfohidrolaza.[1] Ovaj enzim katalizuje sledeću hemijsku reakciju
- mio-inozitol heksakisfosfat + H2O 1L-mio-inozitol 1,2,3,4,6-pentakisfosfat + fosfat
Ovaj enzim deluje i na produkt gornje reakcije i sporo formira Ins(1,2,3)P3.
