Since I do the cooking, my Friday Night Porch Party friends clean the kitchen every Friday night. This past Saturday I found a container of leftover grits in the fridge along with an assortment of leftover tot bar toppings. I drug them all out thinking about what I could do with all the leftovers. I started playing around with different flavor combinations to create these grit balls. Jack and Lou were my tasters, and we settled on this recipe. If I’m honest, its southern wedding quality.

If you ever make too much grits and have some leftover…. Use them to make fried grit balls the next day! 

Ingredients
Canola oil, for frying
1/2 cup country sausage cooked (i.e Jimmy Dean’s)
2 1/2 cups leftover cooked grits 
1 cup grated extra sharp cheese 
1/2 cup all-purpose flour 
1/2 teaspoon paprika 
1/8 teaspoon cayenne pepper 
3 large eggs, lightly beaten 
1 cup panko breadcrumbs 
Kosher salt 

Directions 
Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360 degrees F.
Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the sausage and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add th Grit Balls, Grits Breakfast, Country Sausage, Kardea Brown, Breakfast Balls, Hot Pepper Jelly, Jimmy Dean, Slotted Spoon, Pepper Jelly
