Ingredients: 
8 oz rice noodles
1/2 block tofu cubed 
1 sliced bell pepper
1 cup sliced shiitake mushrooms
1 cup edamame
1 cup chopped bok choy 

Garnish
1 tbsp sesame seeds
1 tbsp scallions
1 tbsp cilantro 

Sauce:
16 oz water
1/4 cup tamari or soy sauce 
1/4 cup teriyaki sauce
1 tbsp chili garlic paste or sriracha 
1 tbsp toasted sesame oil

Directions
	1.	Pre heat the oven to 400F
	2.	Pour and mix sauce ingredients in an oven safe casserole dish
	3.	Add in the noodles, tofu, and vegetables.
	4.	Put in the oven for 20-25 minutes until sauce is absorbed and noodles are cooked! (Don’t overcook it will get mushy!) 
	5.	Add garnish
	6.	Enjoy!
