Seen a bunch of those rice paper croissant recipes floating around but thought I'd try out the rice paper as a gluten-free phyllo/filo dough substitute. Whipped up a bunch of these little spanakopita parcels which are packed full of spinach and feta goodness and encased them in a baked rice paper "pastry". These were actually so easy to throw together and soooo satisfying to eat - the outside is nice and crispy and you get all those lovely layers from the folds! Give this one a goooooooooo x

Recipe 👇 (makes 4 parcels)

Ingredients
Filling
3 spring onions (sliced)
300g spinach
2 Tbsp dill (finely chopped)
1 egg
1 Tbsp breadcrumbs
100g feta (crumbled)
