The buckwheat flour is made from carefully selected buckwheat seeds, 100% from Hokkaido. It is slowly and carefully ground in a stone mill to bring out the maximum aroma, richness, and mellowness. Another attraction is that it is kneaded with "Akamoku", a specialty of Enoshima. The special pot also uses convection to boil the buckwheat evenly, and we use the finest quality. Please enjoy the rich flavor that can only be achieved with soba made that day.

We prepare our own homemade dashi soup, which is carefully selected for its flavor and taste. The dashi is a unique and exquisitely balanced blend of high quality honkare saba shavings, bonito flakes, kombu, dried anchovy, and other ingredients. classic Kaeshi, which has a basic flavor, is carefully prepared in the restaurant for at least two weeks. You can enjoy the flavor of kaeshi even with simple dishes such as zaru (colander) and kake (buckwheat noodle). It is also a perfect match with "Ebi-ten iso-oroshi soba" and "Tenkake soba".
