Food Freshly boiled soba noodles made to order.
Our soba is made from carefully selected buckwheat flour. The best state of soba is said to be "freshly ground, freshly made, and freshly boiled." Since buckwheat flour oxidizes during storage, we grind it daily using a stone mill that is set up in our shop. We make the noodles in-house from that flour and boil them freshly each time we receive an order.

We diligently prepare our dashi every morning and evening without fail. This is because the flavor of the dashi diminishes over time. We blend selected ingredients tailored to our region, starting with the rich and aromatic Bonito, to create dashi that emphasizes authenticity. This dashi elevates the deliciousness of our signature soba and udon dishes at Washoku Mendokoro Sagami.
