The soup stock is made with dried bonito flakes and Rausu kelp from Makurazaki, Kagoshima, which are ground in the store
...every morning. The owner does not want to use chemical seasonings, so he combines light soy sauce made from domestic ingredients and mirin made from domestic glutinous rice to create the "ultimate soup stock."
The noodles are made with oil-free somen noodles from Miwayamakatsu Seimen. The noodles made with Yoshino kudzu have a unique texture. The noodles are made with carefully selected flour, salt, and water, giving them a strong sweetness and a chewy texture.
