"the only" should be used in a front of a gerund, yes, so "It was the only spelling she knew." or "The only swimming he had done was in a pool.", things like that. The only examples I can think of for "the same" before a gerund is in phrases like "This is the same thinking that got her into trouble." or "The same writing was found in different places.", but I can't imagine saying "the same playing" or "the same running".

"same" can't be used in front of a pronoun, but "only" can in the sense of "Only he had met her before" or "She knew that only I lived in the building." It can sound quite formal/literary in other places, so "I gave it to only him" is possible but much more formal than "I only gave it to him".

A: In English, talking formally is more about being polite. for example instead of saying,
"Come over here John" you can say
"John, could you please come here?".

Try not to be too direct or sound too confident. You can use words like
"Pardon" or "Excuse me?" Instead of "What did you say" or "What?" If you want to ask for permission you can use "May I..."
"May I look at those documents?" Even though these are polite ways of saying things, it still sounds stiff. I wouldn't worry about it that much, but it also depends on what workplace you are gonna work at. If the work is like construction (for example), you don't really need to be that formal but if it's business you probably do.
