To each pint jar add 1/2 tsp. canning salt, 1/2 tsp. oregano leaf, 1/2 tsp. cumin, 1/4 tsp. garlic powder, 1/4 tsp. onion powder, 1/2 tsp. orange juice concentrate and 1 inch bay leaf. Add cubed pork to fill with 1 inch head space. Wipe rims. Place hot lids and rings on jars. Process 10 pounds pressure for 75 min.
