This is a variation on a homity pie - one of my absolute favorite dinners when I was a kid...

This is really filling, so just have it with roasted veg or salad. This also works as mini pies if you don't want to have a big one!

800g white potatoes
A sheet of ready rolled shortcrust pastry
Oil for frying
3 medium leeks thickly sliced
1 tbsp finely chopped Rosemary
100g grated cheddar cheese
100-150g of brie or baking camembert cut into medium bitesize pieces
