Ingredients:  For the Grits: 1 cup stone-ground grits, 4 cups water or chicken stock, 1 cup heavy cream, 1 cup shredded cheddar cheese, 2 tbsp butter, salt to taste. For the Shrimp: 1 lb large shrimp (peeled and deveined), 4 slices thick-cut bacon (chopped), 1 small onion (diced), 2 cloves garlic (minced), 1 tsp paprika, ½ tsp cayenne pepper (optional), 1 tbsp lemon juice, 2 tbsp chopped parsley, salt & pepper to taste. Instructions:  Cook the Grits: Bring water or stock to a boil. Stir in grits, reduce heat, and simmer, stirring occasionally, until thickened (about 20 minutes). Stir in cream, cheese, and butter. Season with salt to taste. Prepare the Shrimp: In a skillet, cook bacon until crispy. Remove bacon and set aside, leaving the drippings.
