Apple molasses is much more well known (see my other video) but pear juice works just the same. It’s velvety smooth, tart and sweet with a concentrated pear flavor. I add a bouquet of spices wrapped in cheesecloth in the video but it’s optional. Cultural references on it are few and far between but it’s made and sold in Turkey where it’s a type of pekmez (fruit molasses) as well as in Germany where it’s known as Birnenkraut and perrenstroop in the Netherlands. Quick and easy to make with just the right amount of citrus and sweetness, the cranberry sauce will be a winner with your holiday spread! Ingredients: 1 (12 ounce) bag fresh cranberries 1 cup maple syrup 2 large oranges, zest and juice 2 tablespoons fresh lemon juice 1/4 teaspoon salt + more to taste Instructions: Add all of the ingredients to a medium saucepan, stirring to combine. Bring the mixture to a low boil. Simmer for 12-15 minutes, stirring occasionally, until until the mixture starts to thicken. Remove from the heat and allow to cool (it will continue to thicken while it cools). Taste for seasoning and add salt as needed. Serve and enjoy!
