Apple molasses is much more well known (see my other video) but pear juice works just the same. It’s velvety smooth, tart and sweet with a concentrated pear flavor. I add a bouquet of spices wrapped in cheesecloth in the video but it’s optional. Cultural references on it are few and far between but it’s made and sold in Turkey where it’s a type of pekmez (fruit molasses) as well as in Germany where it’s known as Birnenkraut and perrenstroop in the Netherlands.
