Mushroom and Spinach Lasagna Rolls
Preheat oven to 375°F (190°C) and grease a baking dish. Cook lasagna noodles according to package instructions; drain and set aside. In a skillet, heat olive oil over medium heat; sauté onion and garlic until fragrant. Add mushrooms and cook until tender, then stir in spinach, Italian seasoning, salt, and pepper until wilted. In a bowl, mix the mushroom-spinach mixture with ricotta and half of the mozzarella. Spread a portion of the mixture onto each lasagna noodle, roll them up, and place seam-side down in the baking dish. Top with remaining mozzarella and Parmesan cheese. Green olive pesto lasagna I am OBSESSED with this recipe. Also you don't have to chop or prep a single vegetable, but it's still loaded with plants and protein. This is one to impress! Ingredients: • 300g silken or semi firm tofu • 1 x 230g jar green or Sicilian olives, drained • 90g (approx 1/2 jar) vegan pesto • 4 TBS nutritional yeast • 1 tsp garlic powder • 80g TVP, rehydrated • 1 tin drained lentils • 1 tsp powdered beef style or veggie stock • 600g pasta sauce • 1 pack dry lasagne sheets • 1/4 cup cashews • 1/4 cup hot water • 1 tsp onion powder 1 tsp olive oil Preheat your oven to 190deg Make the pesto: In a blender combine the olives, 2 TBS nutritional yeast, tofu, pesto and garlic powder.
