Traditionally, œuf cocotte is a baked egg dish but this one by @jacquespepinfoundation uses steaming for the gentlest cooking. I made a twist to his original steamed egg recipe by adding some Japanese chawanmushi-inspired flavors. The steaming makes the egg taste like a decadent custard topped with the umami from the tobiko fish roe. Silky steamed egg custards are a traditional dish found in many Asian cuisines. There’s Japanese chawanmushi, Chinese steamed egg custard (also known as the water egg) and Vietnamese Cha Trung Hap (I’ll share my mom’s recipe for this soon, it’s sooo good).
