I've got four recipe potatoes that I coated in oil and salt and baked off until tender. My potatoes have cooled slightly. Cut these babies open. Scoop out most of that flesh and then transfer these skins back on to that baking sheet. I've got a pan sitting over medium heat. Add a quarter cup of butter. Add in four garlic cloves. Season that with salt and pepper. Add 400 grams of raw shrimp diced eye and just let those go for about a minute. Add a half a teaspoon of chili flakes. Give that a stir. Season that with a bit more salt. These shrimp are starting to look great. They are pink but they're still undercooked. So, I'm just using a slotted spoon to leave behind all that delicious shrimpy butter and into this pan, add about half a cup of dry white wine and a zest and juice of a lemon. Simmer for about a minute or two just to reduce slightly. I've got my potatoes here. Add in half a cup of cream cheese and half a cup of sour cream. This mixture is cooked down nicely. Add that into the potatoes as well. Mash this together until it's nice and smooth and creamy. Add in those shrimp, two tablespoons each of chopped parsley and chives and give that a good mix. Season that with some salt and pepper. Now transfer this mixture back into those skins. Pop them into a 400 degree oven for 10 minutes. Then I'm going to pop the broiler on for a minute or two just until a little thin. These twice-pay potatoes smell amazing. This is the best thing since french fries were invented.
