Yigit E-mail: vural.yigit@gmail.com Bogazici University, Istanbul, Turkey Food as a proper subject for philosophical inquiry is well entrenched in the past and current thought system. Food products, food preparation and the enthusiasm have been deliberated to be a philosophical interest. Since the good food, good eating, good living are concepts in attendance, the following phenomenons are taken into consideration by food technologist; what the antique philosophers say about food and nutrition? What are the contemplative aspects of esthetic, social, cultural and moral functions of food, ethical dilemmas and current approaches in food ethics? The dialectical understandings of social change of food features were need to discussed deeply such as; Fast/slow foods, traditional/modern, local/international, price/quality, organic/contaminated, processed/natural, sensible (taste)/ consumable, nutritional/ presentable. On the other hand the heuristics of environmental reasoning like anthropocentrism, anthropomorphism and zoocentrism are taken into the consideration. The failure of agricultural expertise and the in the food disease crisis, the gap between food and functional foods, genomics and nutrigenomics, globalization of the food production system, tasting, enjoying, feasting, fasting, gluttony and consciousness of consumers were also discussed. The perception of good living and eating with moral dilemmas, differences in risk factors and views on food safety have been changed vividly. These factors are often in conflict with each other and a balance will thus need to be searched by food scientists and technologist. The genome changes and nano-technology applications in agri-food system, has needed to create a new paradigm changes in food technology. Now that, we have access to the blueprint of our paradigm shifts of all the processes and technology involved. Because of the public responses were altered by reason, what will be the responsibilities of food technology means good living; distinguish between engineering and food for thought?
