Collaboration, collaboration, collaboration! With your client and your team! Often when we are present with this challenge by a client, it's simply a matter of rearranging our workflows on their other jobs in the shop. If it starts affecting other customers its a different issue. But regardless...collaboration! Consider this quote by Andrew Carnegie: “Teamwork is the ability to work together toward a common vision. The ability to direct individual accomplishments toward organizational objectives. It is the fuel that allows common people to attain uncommon results.”

Stay Prepared: Maintain a solid inventory and good supplier relations. This way, you’re always ready to move quickly without compromising quality. Review and Adapt: After a rush, take a moment to reflect on what went well and what you can tweak. Continuous improvement is key!

I would get the various groups together to discuss the impacts, define the effects they would have, discuss alternatives and get all to agree on the approach to take. I would then look at the project to eliminate the disruption and develop a schedule, identifying the risks at each step. Hopefully, most would have been considered at the start of the project. I would then make sure both internal and external customers are fully informed and status reviewed to make sure work is on schedule.

In addition to all the great answers, I also work with the customer to understand their demand and trends. It's better to become prepared for emergent demands if that will be a norm for their business. Then, we can change our own production systems to better manage intermittent rush seasons or see a bow wave of demand coming.
