I used to love these in TGI Fridays and this is the first time I’ve tried them in my Airfryer and they did not disappoint! They are also super easy to make and a great way to use up leftover baked potatoes.

And you can use the leftover potato for mash or cheesy potato cakes!

Ingredients:

4 medium/large baked potatoes (let them go cold)
300g bacon pieces, pan fried 
150g grated cheddar cheese (my fave is @kilmeaden)
Handful of chives
100g sour cream (my fave is @avonmore)
Salt and pepper, to taste
Olive oil spray

Instructions:

Preheat your Airfryer to 200°C/400°F
