Inspired by an outstanding slice from Mexico City’s La Cocina de Mi Mamá, it’s fluffier and lighter than cornbread, slightly sweet, and such a crowd-pleaser that we recently adapted the recipe for frozen corn kernels so that we could make it year-round. Also, in this week’s blender cake theme, the batter is entirely mixed in a blender, which is an all-purpose convenience cooking tool in many parts of the world.
