Lorenzo Salami on Instagram: "Recipe alert ‼️🚨 Square croissant 🥐   Ingredients:  500gr strong flour  50gr caster sugar  10gr fresh yeast  7.5gr honey  60gr whole milk 125gr water  1 whole egg   65gr butter  1 vanilla pod  10gr salt   250gr butter for lamination   Method:   Mix flour and sugar, add all the wet ingredients at once (apart for butter, vanilla and salt)and mix until smooth and compact. Cream the butter (18°/20°C) and add the vanilla and salt to it. Knead the butter in the previously made dough until it is completely absorbed. Let the dough proof for 2hrs at 24°/26°C making sure it is well covered with cling film. After the 2hrs place directly in the fridge at 4°C overnight.  The next day, roll out the dough and laminate with butter:  1st lamination - 4 folds, rest in the fri Square Croissant, Fresh Yeast, Donut Flavors, Vanilla Pod, Cling Film, Whole Eggs, Caster Sugar, Whole Milk, Finger Food

Do 1 double and 1 single fold, then roll the dough to 8 mm thick square with sides measuring 20x20 cm. Cut it into 1-inch strips, fold, place, and proof inside an 8 cm baking ring. Bake as usual.
