I’ve tried cottage cheese queso before but a cute client of mine sent me it with meat and rotel and I had to try!

What you need: 

Ground meat 92% lean or higher 
Taco seasoning 
1.5 cups of cottage cheese
1 can of rotel 
1/4th cup of fiesta cheese 
Garlic powder, onion powder, salt and pepper 
I also added nutritional yeast to make it more cheesy but you don’t have too! 

Cook meat on medium heat, add half the taco seasoning packet, mix.

While that cooks, add cottage cheese, fiesta cheese, the rest of the taco seasoning, garlic powder or salt, onion powder, a splash of water, and nutritional yeast if you want it to be “cheesier.” Blend it REALLY well!

Why does cheese have so many WW points?  Two tablespoons of low fat cottage cheese is 0 points, making my two tacos 5 WW points.  If you count calories or macros, these are 266 calories, 8 fat, 24 carbs, 3 fiber and 22.5 protein

2 corn tortillas
1/3 cup cooked 97% lean ground beef
2 tablespoons lowfat cottage cheese
1/4 cup chopped romaine lettuce
2 tablespoons taco bell sauce

Microwave tortillas.  Spray one side with avocado oil spray.  Flip and divide cottage cheese and beef.  Fold and cook over medium low heat for 5 minutes per side.  Add desired toppings - I just did romaine and taco bell fire sauce.
