This one really is such a nice, refreshing way to make a protein packed salad for beating the winter blues! To make: For the pickles: 1 carrot, julienned 1 daikon, julienned (you can use normal radishes) 1 red chilli (optional) 1tsp salt 1tbsp sugar 1/2 cup vinegar For the tofu: 1 block tofu, about 220g, cubed 1tbsp light soy sauce 1tsp dark soy sauce 1tsp mirin 1tsp sesame oil 1tsp sugar 1tsp maggi For the dressing: 1/4 cup vegan mayo 1tbsp sriracha 1tsp sesame oil Juice of 1 lime 1 cucumber, peeled 1/2 white cabbage, sliced Coriander Method: -add the carrot, daikon and chilli into a bowl. Add salt and sugar then cover with vinegar (I used ACV but any will work) -set aside whilst you make everything else -make your tofu marinade in a bowl by combining all the ingredients -air fry at 200c for 20 minutes. Keep the leftover marinade for the dressing -make the dressing by adding the mayo, sriracha, sesame oil and lime juice to marinade and mix. I added a splash of the vinegar from the pickled veggies too -in a large bowl, add your cabbage, cucumber, pickles (squeeze them out a bit), coriander and a pinch of salt and dressing -serve with the tofu and sesame seeds #vegan #plantbased  #veganfood #veganrecipes   #veganuary #asian #asianfood #salad #banhmi | Ben Rebuck
