Sagarika🌻Swagatika on Instagram: "Sabudana Kheer!!😍 Step-by-step recipe: ▪️Rinse 1 cup sabudana until the water runs clear of the starch. ▪️Soak them in water for an hour. ▪️Heat 1 tbsp ghee in a heavy bottomed pot. ▪️Add 1/3 cup chopped nuts until they turn light golden. ▪️Add some raisins and fry until they turn plump. Remove and keep aside. ▪️Add soaked sabudana to the same pot. Stir continuously for a minute. ▪️Pour 1.5 liters milk and stir well. ▪️Cook until the sabudana is cooked. ▪️Add saffron strands and mix. ▪️Cook until the Kheer thickens. ▪️Add 1/2 cup sugar and mix well. ▪️Cook for another 5 minutes. ▪️Add fried dry fruits and nuts. ▪️Add 1 tsp cardamom powder. Ingredients used are: 1 n half Cup Dry Coconut (chopped) 1/4 Cup Almonds 1/4 Cup Walnuts 1/4 Cup Pistachios 1/2 Cup Raisins (increase the quantity if you want them sweet) ➡️ You can also use Cashews or any other dry fruits of your choice ➡️ You can use dates for sweetness instead of raisins. I wanted to keep the texture somewhat dry which is why I used raisins. Dates will give it a sticky texture. ➡️I did not use ghee at all as the dry coconut and nuts releases oil and that is sufficient to bind the ladoos however if you want you can add 1 tsp melted ghee.
