    Heavenly Hotcakes

    INGREDIENTS 1 1/2 C Four 3 Tbs Baking Powder 1/2 tsp Baking Soda 1/2 tsp Salt 1 1/2 Tbs Sugar 1 C Buttermilk 1/2 C Cold Water 1 Egg 3 Tbs Melted Butter 1/2 Tsp Vanilla Extract DIRECTIONS Prepare stovetop griddle or large non-stick fry pan lightly wiped with cooking oil. Preheat the cooking surface to just before smoking. Sift together dry ingredients. In a separate bowl whisk together wet ingredients. Slowly fold dry ingredients into wet. Do not over stir. Resultant batter should be loose and lumpy. Add more water if necessary. Using a 1/4 C measure drop batter onto heated surface. Set timer for 1min 30seconds. Turn. 1min 30seconds. Add great Michigan Maple Syrup, A pat of butter, eat and imagine eating clouds.
