For me, nothing really says summer more than sitting back and enjoying a glass of gin and tonic.
Gin is made from a neutral grain, fruit or molasses spirit, just like vodka. Juniper berries are used to
flavour, and herbs and spices called botanicals are added for fragrance.

Each gin has its own distinct personality. These personalities are created by using botanicals such as
citrus peel, coriander, cubeb berries, cassia bark and even liquorice root, to name a few, to flavour the
spirit.
Gin has been around for centuries: the Dutch started in the mid 1600s making an aged juniper-
Lander Brau flavoured spirit called genever. When Dutch-born William of Orange leapt the English Channel and
Weissbeer was crowned King of England, he helped introduce this beverage to the people of England. Londoners

at the time embraced the juniper flavour, did away with the aging process and hence gin as we now

e ite . Soon almost every street corner had someone distilling a gin-like drink. Over the years, the government

! s increased regulations and taxes on gin production. Finally in the early 1800s, stills were licensed and
by the 1830s, gin was produced only by certified distilleries which often sold the drink in "gin palaces";
grand halls decorated in tawdry vaudeville-theatre style.
At the same time, the continuous still was invented, which allowed for a purer and more consistent spirit
to be produced. Gin distillers no longer had to mask the flavour of inferior spirit with sugar and strong

spices, and could turn their attention to a new kind of gin. It was called dry gin because it was clear
24*345ml and unsweetened and flavoured with more subtle aromatic botanicals like coriander, cassia, angelica
and orris root. Because most of the distillers making this type of gin were based in London, they bottled
their products as London Dry Gin and the name stuck.
These days the term London Dry Gin refers to the style of spirit and not its place of origin: as a matter

cocktail of all, the martini. A martini is made with gin and sweet vermouth; a dry martini is made with

The wonderful thing about gin is that no two gins are alike. Make two martinis with two different gins
and you will have two very different drinks. Have the same gin with a different garnish and different
botanicals are enhanced. Here are a few of my favourite gins.

Hendricks Gin $75

NEW Distilled with rose petals and cucumber, Hendricks carries
30pk from a distinct taste thats dangerously drinkable. Dont let
Belgium the old-school bottle fool you; Hendricks has only been
around since 1999. Light and aromatic, this is one of the
few gins that could get anybody to try gin on the rocks, or
its perfect with tonic garnished with cucumber.

Tanqueray Gin $49

A classic London Dry Gin. The nose is filled with fresh
junipers, lemon zest and a faint rootiness. The palate
Miller Chill has subtle floral and crystalized fruit notes. Its really

Older than Hendricks, but still only introduced onto the
market in 1987. This is one of my favourites, with strong
citrus on the nose and some juniper tones. The palate
is bright and floral with lots of aromatics and hits of
coriander and citrus. My favourite for martinis.

Gordons $39
Always a solid gin. Loaded with juniper and layered
with citrus, mainly lemon. The palate is bright, touches of
coriander, soft junipers and hints of citrus. Perfect for gin
and tonic garnished with a slice of lime.

The secret to Macchina Espressos success, I would say, is the consistency and taste of the coffee
beans which are roasted right here in the Kingsgrove store, Harry explained. While other coffee
franchises roast their green coffee beans for 10 minutes, Harry takes his time to carefully slow-roast

them for 18 minutes. This brings out the aromatic flavour, creating a superior blend of coffee. Harry
has since built a wholesale business selling great-tasting coffee beans alongside the success of his
franchised locations. Production happens right on the second floor in their Kingsgrove store, from
roasting to packaging. Harry even offers cleanskin packaging and free-on-loan machinery to tailor to
his clients every coffee need. Although Macchina Espresso may not be your local coffee house, you
can still taste their coffee everyday by taking home their beans.
Apart from the coffee, the food is also great. I was seated outside and watched as the waiters brought
out mouth-watering dishes, hoping the next one would be mine. I could see the beef and bacon burger
served on tables next to mine, and the sight of
the American melting cheese and crisp fries
made my stomach growl. This is what I will
get the next time I visit. However, I am glad
I stuck with my gut and ordered the grilled Evans &
barramundi. It was cooked perfectly, tender Tate Classic
Margaret River
and very succulent. This paired very nicely 750ml
with the tomatoes and sauted mushrooms.

GRILLED PRAWNS WITH GARLIC

INGREDIENTS 4. Increase the heat of the grill to high.
3/4 cup olive oil 5. Remove the prawns from the marinade, season
3 tablespoons freshly chopped thyme leaves with salt and pepper and grill until golden
1 1/2 tablespoons ancho chilli powder brown on each side, about 1 1/2 minutes per

THE SHIRES BEST KEPT SECRET

Archies Flame Grille is an absolute gem, tucked away in the suburb of Sylvania
Waters and boasting a menu that would make any burger enthusiast water at the
mouth. Not only are the burger lovers catered for, but the fresh salads and flame-
grilled charcoal chicken are a perfect combination for the fitness gurus among us.
I was blown away by the variety of burgers on offer: 100% grass-fed Angus
beef burgers; flame-grilled chicken fillet burgers; 12 hour slow-cooked pulled
pork burgers; grilled barramundi burgers; slow cooked lamb burgers and even a
magical veggie burger. It was a genuine conundrum trying to decide - first world
problems, I know.
On top of the signature burgers, Archies also has a special burger board, which
currently features Canadas Best, B.O.B and JuJu on the Beef. After tossing and turning between the signature
and special burgers, I couldnt pass on Canadas Best.
Where do I start with this heavenly burger?
The fresh brioche bun was soft but still firm enough to hold this masterpiece together. I was given the choice of a gluten free bun, milk bun, wrap or
Archies unique sesame seed bun, but the friendly staff insisted I go with the brioche. The 100 per cent Angus beef patty was tender and juicy, and the
bun to patty ratio was perfect, which in my opinion is essential for a great burger. The patty was perfectly paired with maple-flavoured bacon, this is why
it is known as Canadas Best. I hadnt really experienced legit maple-flavoured bacon before, but these flavours were definitely meant to be together. The
smoky, salty flavour of the bacon cut through the incredibly sugary maple flavour, to deliver the ultimate sweet and savoury combo. All of this was topped
with deliciously melted cheese and creamy Archies Dijon sauce. This burger is an absolute winner and hopefully becomes a regular on the Archies menu.
A couple of the signature burgers that stood out for me were the Southern Burger and the Sydney Royale. They are both on my hit list for next time, Im
genuinely excited to work through Archies burger range; its like Im a six-year-old at Christmas.
Of course, a burger isnt complete without fries and a drink, and boy do Archies have this covered. Their Dirty Fries are covered with bacon,
chilli sauce, Archies sauce and double cheese - yes double cheese! To wash down my meal fit for a king, I ordered a Milo milkshake. It amazingly
complimented my meal; it was so flavoursome and the perfect texture.
The menu doesnt stop at burgers and fries: the genuine flame-grilled charcoal chicken is tender, succulent and packed full of flavour. The birds are roasted
over a naked flame, after being marinated in a unique herb brine, which allows for the crispy browning of the skin. This could be perfectly paired with
one of their many salads; from traditional greek, caesar, potato or coleslaw to modern beetroot or quinoa.
Whilst I was eating my meal I noticed that Archies has a hot food bar, with fresh golden crumbed tenders, delectable chicken wings and Archies famous
mac n cheese and mac n cheese balls. You are truly spoiled for choice at Archies.
I was pleased to hear the owners from Archies and 5th Earl Caf Rosebery will be joining forces at the Waterworks Hotel and Works Bistro in Botany this
May. Burgers by Archies followed by drinks at the Waterworks Hotel sounds like a winning combination to me!
