Ingredients
- Butter 130g
- Flour 130g
- It is SUPER IMPORTANT that the amount of butter is the same as the amount of flour
as that’s the only rule in making a good cheese sauce!
- Macaroni, pour into the dish you want to make it in first, until it covers the bottom
and a little bit more (leave space for pasta to expand, + sauce and ingredients)
- Extra cheese to go on top
METHOD
3) Boil the kettle and fill a saucepan with enough water to cook the pasta, bring to boil
and add plenty of salt.
4) If you’re adding bacon, fry it/put it under the grill so it is ready for later
5) Put the pasta in the boiling water and under cook by two/three minutes (around 7/8
minutes normally)
6) Start to make the Cheese sauce.
8) Add the butter to a big pan, turn on the heat to medium-low and add the flour.
Whisk until thick and almost solid like cookie dough
11) Turn the heat up to medium-high once you’ve added a bit of milk, as it starts to boil
it should start to thicken. Keep adding milk, but make sure not to add too much at
one time as you can’t take milk out! Keep the sauce thick.
12) When you think the sauce looks good, take it off the heat and add most of the
cheese. Mix well!
13) Separate into a veggie pan and a non veggie pan, then split the tomatoes, pepper,
broccoli and any other veg equally between them, then add chorizo and bacon to the
meat one. Mix well!
15) Pour into the dishes to cook them in and sprinkle cheese over the top
16) Put in the oven for about 20 minutes, or until the cheese is golden and bubbling.
