On pan paella

Ingredients
1 onion diced
1 carrot diced
2 cloves garlic
1 chicken breast diced
50g chorizo
½ red pepper sliced
Tbls tomato puree
150g risotto rice
1 tbls paprika
Bag frozen mixed vegetables

Method
 Heat a pan with oil and add chorizo followed by onions and garlic and carrot and cook until
soft
 Add chicken and colour all over
 Add tomato puree and cook for 2 minutes to remove bitterness
 Add the pepper and then rice and cook for about 2 minutes (cookin the rice in oil will
create a film around the rice making it so it won’t stick to the pan)
 Remove from heat and add the paprika (if added to direct heat it will make the paprika
bitter so it’s very important)
 Add frozen vegetables then pour in all of the stock and keep on a low heat until all the
stock has been absorbed
 Season with salt and its ready to eat
