HARD-BOILED EGG
Making hard-boiled eggs is easy. All you need is a pot, some water and
eggs. Boiled eggs should never really be boiled as it can cause the shell to
crack and make the whites rubbery.

There’s no shortage of methods for making hard-boiled eggs. It’s easy to


follow and results in perfect eggs every time.

In China, there are different flavors for the boiled egg, like tea, beer, and
braised egg. Those tasty different hard-boiled egg can be served as an
appetizer for lunch and dinner.

BEER EGG
You will need:
Bowl 10 Eggs

Pot 500ml Beer

Spatula 75g Soy Sauce

3 Dry Chile Peppers

3 Star Anise

6g Cinnamon

Water

Steps:
1. Place the eggs in a single layer on the bottom of
the pot and cover with cold water. The water should
be about one inch or higher than the eggs. Cover the
pot and turn on fire of medium-high heat.

2. After water begins to boil, turn off the fire. Wait


several 3 to 5 minutes, until the eggs are cooked
enough. Drain and immediately run cold water over
the eggs until cooled. Peel off the eggshells.

3. Use a knife to make a few vertical strokes on the


eggs for better taste.

4. Heat the pot for 10 seconds, then pour oil in it.


Add dry chili peppers, cinnamon, star anise and stir
them for another 10 seconds.

5. Pour beer, soy sauce to mix. Then place eggs in


the pot. Let them boil over high heat, then switch to
medium heat, about 35-40 minutes.

6. Until the eggs are colored, then turn on high heat,


and stir frequently until the sauce are almost dry.

7. Place the delicious beer eggs in a plate and ready


to eat.

Tips

1. Using soy sauce is for bring salty taste and dark color. You can also add
salt, sugar and oyster.

2. Stir the eggs to make the color more even.

TEA EGG
You will need:
Bowl 5 Eggs

Pot Tea Leaves(Green Tea/ Black Tea)

Spatula 30 Peppercorns

10g Salt

30ml Soy Sauce

Water

Steps:
1. Place the eggs in a single layer on the bottom of
the pot and cover with cold water. The water should
be about one inch or higher than the eggs. Cover the
pot and turn on fire of medium-high heat.

2. After water begins to boil, turn off the fire. Wait 3


to 5 minutes, until the eggs are cooked enough. Take
out the eggs one by one, then beat the eggs with a
spoon to make cracked eggs for tasting better.

3. Pour water and put tea, peppercorns, salt, soy


sauce and cracked eggs in a pot.

4. After boiling the water again, turn off the fire and
let the eggs stay in the water for half a day. Then it
will be ready to serve.

Tips:
1. The used tea leaves also can be used for cooking tea eggs.

2. If you like sweet flavor, you may add some sugar.

3. You can let the eggs stay in the water for a whole day. It will taste
stronger.

BRAISED EGG
You will need:
Bowl 3 Eggs

Pot 5 ml Soy Cause

Spatula 1 Star Anise

A handful of Fennel

Water

Steps:
1. Place the eggs in a single layer on the bottom of the pot and
cover with cold water. The water should be about one inch or
higher than the eggs. Cover the pot and turn on fire of
medium-high heat.

2. After water begins to boil, turn off the fire. Wait several 3 to 5
minutes, until the eggs are cooked enough. Drain and
immediately run cold water over the eggs until cooled. Peel off
the egg shells.

3. Put soy sauce, fennel, star anise and boiled eggs in the pot.
Cook slowly over low heat and flip the eggs to make them evenly
colored.

OMELETTE
An omelette is one of the easiest meals to make and it works
beautifully for breakfast, lunch or dinner. In Asian countries,
people like to add some vegetables to make the omelette looks
more colorful and tastes richer.

CARROT OMELETTE
You will need:
Bowl 3 Eggs

Whisk or fork 200ml Water

Non-stick pan Oil

Spatula 4g Salt

100g Flour

1/3 Carrot

5 Shallots(optional)

Steps:
1. Chop the shallots and cut carrots into the finest shreds.

2. Crack the eggs into a bowl, and whisk it all together. Be


sure to incorporate the yolk and the whites together well.
Season with salt and pepper (optional).

3. Mix flour and water until the surface is fine.

4. Pour the egg mixture into the pot with flour and water,
add carrot and shallots.

5. Put a little oil into frying pan, and pour the egg mixture.
As the mixture sets around the edge of pan, use a spatula
to push cooked portions toward the center of pan gently.
Tilt and rotate pan to allow uncooked egg to flow into
empty spaces. When the surface of the eggs looks moist
but does not move when the pan is jiggled, it’s ready for
filling.

6. Fold the omelette in half with a spatula and let the


bottom brown slightly before sliding onto a plate.

LEEK OMELETTE
You will need:
Bowl 2 Eggs

Whisk or fork 40 g Leek

Non-stick pan 2 g Salt

Spatula 100g Flour

200Water

Oil

Steps:
1. Chop leeks and put them in a
bowl. Crack 2 eggs into the
same bowl, then mix the leek,
egg, flour and water, seasoning
with salt.

2. Put a little oil into frying


pan, and pour the egg mixture.

3. As the mixture sets around


the edge of pan, use a spatula
to push cooked portions
toward the center of pan
gently. Tilt and rotate pan to
allow uncooked egg to flow
into empty spaces. When the
surface of the egg looks moist
but does not move when the
pan is jiggled, it’s ready for
filling.

4. Fold the omelette in half


with a spatula and let the
bottom brown slightly before
sliding onto a plate.

SPINACH OMELLETE
You will need:
Bowl 2 Eggs

Whisk or fork 200 g Flour

Non-stick pan A handful of Spinach

Spatula 2g Salt

50ml Water

Oil

Step:
1. Clean the spinach and put it in the boiled water for 1 minutes. Then
take it out and chop them for mixing with egg later.

2. Crack the eggs into a bowl, add salt, flour, spinach and water,
then whisk them all together.

3. Put a little oil into frying pan, and pour the egg mixture.

4. As the mixture sets around the edge of pan, use a spatula to push
cooked portions toward the center of pan gently. Tilt and rotate pan
to allow uncooked egg to flow into empty spaces. When the surface
of the egg looks moist but does not move when the pan is jiggled,
it’s ready for filling.

5. Fold the spinach omelette in half with a spatula and let the bottom
brown slightly before sliding onto a plate.

Tips:
1. Spinach should be boiled in boiled water to effectively remove
excess oxalic acid and astringency.

POTATO OMELLETE
You will need:
Bowl 3 Eggs

Whisk or fork 1/2 Potato

Non-stick pan 5 Shallots

Spatula 1/2 Carrot half (optional)

2g Salt

Oil

1ml Vinegar(optional)

1g Black Sesame Seeds(optional)

100g Flour

Step:
1. Cut potato into the finest shreds. If you want
to add zucchini and carrot, you may cut them
into the finest shreds. Cook potato, zucchini and
carrot with a little hot oil. Make sure they are
all cooked enough, and leave them on the side.

2. Crack the eggs into a bowl, add flour, potato,


shallots and carrot (optional) then whisk them
all together. Season with salt and vinegar
(optional).

3. Put a little oil in the frying pan, and pour the


egg mixture. As the mixture sets around the
edge of pan, use a spatula to push cooked
portions toward the center of pan gently. Tilt
and rotate pan to allow uncooked egg to flow
into empty spaces. When the surface of the egg
looks moist but does not move when the pan is
jiggled, it’s ready for filling.

4. Fold the potato omelette in half with a


spatula and let the bottom brown slightly
before sliding onto a plate.

Tips:
1. The vinegar is to remove fishy.

2.If you don’t want flour, there is no need to add flour in the egg mixture,
because potato contains a lot of starch, and after adding the egg liquid, they
will adhere well, and there is no need to worry about loosening when
frying.

PUMPKIN OMELLETE
You will need:
Bowl 350g Pumpkin

Whisk or fork 2 Eggs

Non-stick pan 180g Flour

Spatula 3g Salt

Oil

Steps:
1. Cut pumpkin into the finest shreds.

2. Crack the eggs into a bowl, and whisk it all


together. Be sure to incorporate the yolk and
the white together well. Then add pumpkin,
flour and water then whisk them all together.
Season with salt.

3. Heat a pan over medium-high heat. Put a


little oil in the hot pan, and pour the egg
mixture. As the mixture sets around the edge
of pan, use a spatula to push cooked portions
toward the center of pan gently. Tilt and rotate
pan to allow uncooked egg to flow into empty
spaces. When the surface of the egg looks
moist but does not move when the pan is
jiggled, it’s ready for filling.

4. Fold the pumpkin omelette in half with a


spatula and let the bottom brown slightly
before sliding onto a plate.

STEAMED EGG
If you ever tried steamed egg, it will amaze you by the
super smooth and tender taste. Soft, smooth and fresh
steamed egg is a comforting food as an appetizer or
dessert for breakfast, lunch and dinner. You may make a
small bowl of steamed egg and serve it as a side dish or
make a large bowl and share with the whole family. This

COCONUT MILK
STEAMED EGG
You will need:
Pot Small Bowl Plastic Wrap

2 Eggs 150ml Coconut Milk 1/8 tsp(0.5 mL) Sugar

Steps:
1. Crack the egg into a bowl, add a little sugar. Pour 150ml
coconut milk in the same bowl.

2. Whisk the eggs, sugar and coconut milk together in a


bowl.

3. Cover it with plastic wrap, and use a toothpick to make a


few small holes. Then steam for 10 to 15 minutes.

MILK
STEAMED EGG
You will need:
Pot Small Bowl Plastic Wrap

2 Eggs 150ml Milk 1/8 tsp(0.5 ml) Sugar(optional)

Steps:
1. Crack the egg into a bowl, add a little sugar. Pour
150ml milk in the same bowl.

2. Whisk the eggs, sugar and milk together in a bowl.

3. Cover it with plastic wrap, and use a toothpick to make


a few small holes. Then steam for 10 to 15 minutes.

ORANGE
STEAMED EGG
You will need:
Pot Small Bowl Plastic Wrap

30ml Orange Juice 3 Eggs 250ml Milk 30g Sugar

Steps:
1. Whisk together the orange juice,
sugar and milk in a bowl.

2. Break the egg into juice milk


mixture, and whisk together in the
same.

3. Filter milk mixture twice. Then put


the filtered orange milk mixture in the
bowl and cover it with plastic wrap, and
use a toothpick to make a few small
holes. Then steam for 10 to 15 minutes.

Tip
1. You can use spoon or fork to check the steamed egg. If it is not
watery, that means it is good. You should turn of the fire.

SCRAMBLED EGGS
Scrambled eggs are one of the most versatile dishes to
prepare. They’re delicious plain, garnished with finely
chopped herbs, or dressed up with mushrooms and grated
cheese. In China, they cook scrambled egg with
vegetables and seafood, as one of main dishes for the
lunch and dinner.

SCRAMBLED EGGS
WITH TOMATOES
You will need:
3 Eggs 2 Tomatoes 2g Salt 2g sugar (optional)

5g shallot(optional)

Steps:

1. Crack 3 eggs into a


small bowl, then whisk the
eggs all together.

2. Cut tomatoes into slices.

3. Put a little oil in the


frying pan, and pour the
egg liquid. After the egg
are all cooked, add sliced
tomato, salt and
sugar(optional). Use
spatulas to stir egg and
tomato for 1-2 minutes.

Tips:

1. You may put less salt without adding sugar, the taste will be
sweeter as well.

GREEN PEPPER
SCRAMBLED EGG
You will need:
4 Eggs 3 Green peppers Salt 2g 3 slices Garlic oil

1. Crack 4 eggs into a small


bowl, then whisk the eggs
all together.

2. Cut green peppers into


slices.

3. Put a little oil in the frying


pan, and pour the egg liquid.
After the egg are all cooked,
add sliced green peppers,
salt. Use spatulas to stir egg
and green pepper for 1-2
minutes.

You will need:
3 Eggs 1 Carrot Salt 2g 2 Slices Garlic(optional) Oil

1. Crack 3 eggs into a

slices.

3. Put a little oil in


the frying pan, and
pour the egg liquid.
After the egg are all
cooked, place it in a
bowl on the side.

oil in the hot pan.
Add sliced carrots,
Garlic and salt to
cook.

5. After the sliced


carrots cooked, add
the cooked egg in
the same pan. Use
spatulas to stir egg
and carrot for 1
minutes.

WITH CUCUMBER &
SHRIMP
You will need:
4 Eggs 1 Cucumber 160g Shrimp 2g Salt Oil

1. Crack 4 eggs into a small
bowl, then whisk the eggs all
together.

2. Cut cucumber into slices.

3. Put a little oil in the frying


pan, and pour the egg liquid.
After the egg are all cooked,
add sliced cucumber, shrimp
and salt. Use spatulas to stir
egg and chives for 1-2
minutes.

WITH SHALLOTS
You will need:
3 Eggs 10 Shallots Oil 2g Salt

1. Crack 3 eggs into a
small bowl, then whisk the
eggs all together.

2. Cut shallots into small


pieces.

3. Put a little oil in the


frying pan, and pour the
egg liquid. After the egg
are all cooked, add
shallots and salt. Use
spatulas to stir egg and
chives for 1-2 minutes.

EGG PUDDING
Egg pudding is made by cooking eggs and milk in a
special mold, its soft texture melts in your mouth. It will
amaze you by the smooth and soft taste.

MIKE EGG
PUDDING
You will need:
4 Eggs 340g Milk 10-20g Sugar

few drops of Lemon Juice (optional)

Step:
1. Mix sugar and milk until sugar is melt
completely.

2. Crack 4 eggs into a bowl, then whisk


the eggs all together. Be sure to
incorporate the yolk and the white
together well, until there are only few
bubbles.

3. Pour the egg liquid into the milk slowly


until the surface is fine.

4. Filter the egg milk mixture for three


times.

5. Pour the filtered egg milk mixture into


the containers for containing pudding, and
cover them with foil paper.

6. Add some water in the baking tray, then


put the pudding containers with egg milk
mixture.

7. Put the baking tray inside the oven, turn


on it at 350 F for 35 minutes.

8. After 35 minutes, take the backing tray


out. The pudding is ready to eat. If you like
cold pudding, you also can put the
pudding in refrigerator for several hours.

Tips:
1. You can add several drops of lemon in the milk for tasting better.

CARAMEL MILK
EGG PUDDING
You will need:
4 Eggs 340g Milk 70g Sugar few drops Lemon juice (optional)

Step:
1. Heat the pot with 70g suger and a little cold water
until the water turns brown color. Don`t cook too
long, or it will taste bitter.

2. After the suger cooked, add a little hot water into


the same pot to make caramel liquid.

3. Crack 4 eggs into a bowl, then whisk the eggs all


together. Be sure to incorporate the yolk and the
white together well, until there are only few bubbles.

3. Pour the egg liquid into the milk slowly until the
surface is fine.

4. Filter the egg milk mixture for three times.

5. Pour the filtered egg milk mixture into the


containers for containing pudding, and cover them
with foil paper.

6. Add some water in the baking tray, then put the


pudding containers with egg milk mixture.

7. Put the baking tray inside of the oven, turn on it at


350F for 35 minutes.

8. After 35 minutes, take the backing tray out. Pour


the caramel liquid on top of the pudding. The pudding
will be ready then. If you like cold pudding, you also
can put the pudding in refrigerator for several hours.

Tips:
1. You can add several drops of lemon in the milk for tasting better.

HAM SHRIMP
EGG FRIED RICE
You will need:
1-2 Eggs 130-50g Shrimp 1 cup of Rice 1 Ham 1/2 Carrot

1/2 Cucumber 30g Corns Oil 3-5g Salt Soy Sauce(optional)

1. Put 1 cup of rice and 1and half of water
in rice maker, then cook the rice.

2. Chop the ham, carrot and cucumber


into small pieces.

3. Crack 1-2 eggs into a bowl, then whisk


the eggs all together.

4. Heat a pan over medium-high heat. Put


a little oil in the hot pan, and add ham,
shrimp, carrot, cucumber, corns for 30
seconds. Then add egg liquid to cook until
it all cooked.

5. Put the cooked rice in the same pot to


mix with the other ingredients. Season
with salt and soy sauce ( optional).

6. When the rice mixing with other


ingredients fully, you should turn off the
fire and place the fried rice in the plate.

Tips:
1. You can add other vegetables, if you like.

VEGITABLE
EGG FRIED RICE
You will need:
1-2 eggs 1 cup of Rice 1/2 Carrot 1/2 Cucumber 30g Corn 1
Green Pepper Oil 3-5g Salt 50g Spinach

Steps:
1. Put 1 cup of rice and one and half of
water in rice maker, then cook the rice.

2. Chop carrot, cucumber, spinach,


green pepper, into small pieces.

3. Crack 1-2 eggs into a bowl, then


whisk the eggs all together.

4. Heat a pan over medium-high heat.


Put a little oil in the hot pan, and add
green pepper, carrot, cucumber, corn
for 30 seconds. Then add egg liquid to
cook until it all cooked.

5. Put the cooked rice in the same pot


to mix with the other ingredients.
Season with salt.

6. When the rice mixing with other


ingredients fully, you should turn off
the fire and place the fried rice in the
plate.

Tips:
1. You can add other vegetables, if you like.

BACON EGG
FRIED RICE
You will need:
1-2 Eggs 30g Bacon 2g Garlic 1g Ginger 5g Green Pepper

1 cup of Rice Oil 3-5g Salt 5g Red Pepper

Steps:
1. Put 1 cup of rice and 1and half of water in
rice maker, then cook the rice.

2. Cut bacon, green pepper, red pepper,


garlic and ginger into small slices.

3. Crack 1-2 eggs into a bowl, then whisk the


eggs all together.

4. Heat a pan over medium-high heat. Put a


little oil in the hot pan, and add bacon, green
pepper, red pepper, garlic and ginger for 30
seconds for cooking.

5. Pour egg liquid to cook until it all cooked,


then place it in one place on the side.

5. Put the cooked rice in the same pot to mix


with the other ingredients. Then add cooked
egg, and season with salt.

6. When the rice mixing with other


ingredients fully, you should turn off the fire
and place the fried rice in the plate.
