PREFACE

Praise be to God, the One True God because with grace, his gift is that I can complete this
watermelon skin paper to the extent of knowledge and ability. And also I thank Mrs. Dr. Sri
Adelila Sari, S.Pd, M.Si as Lecturer of Chemistry English course for her guidance.
 
I really hope this paper can be useful in order to increase our insight and knowledge about the
understanding, benefits and purpose of watermelon skin utilization. I am also fully aware that in
this task there are shortcomings and far from what I expected. Therefore, I hope there are
criticisms, suggestions and proposals for improvement in the future, considering that nothing is
perfect without constructive means.
 
Hopefully this simple paper can be understood for anyone who reads it. If the report has been
compiled it can be useful to myself as well as the person who reads it. Previously I apologized if
there were errors of words that were not pleasing and I ask for constructive criticism and

CHAPTER 1
Introduction
1.1 BACKGROUND

Watermelon (Citrullus vulgaris Schard) is one of the horticultural commodities of the


cucurbitaceae family (labu-labuan) which has a high economic value. And the fruit is very
popular among Indonesian people because of its sweet taste, crunchy and large water content.
According to its origins, watermelon plants are said to come from the Kalahari Desert in
Africa, then spread to all corners of the world, ranging from Japan, China, Taiwan, Thailand,
India, the Netherlands, even to the Americas.
Watermelon is also a type of seasonal fruit crop that has an important meaning for the
socioeconomic development of households and countries.
Watermelon plants are seasonal and relatively fast producing that is about 2-4 months. In
Indonesia, many are developed around major commercial cities, including Indramayu, Cirebon,
Madiun, Madura, Lombok, North Sumatra and so on.
In general, watermelon fruit is only consumed by the flesh of the fruit while the skin of the
watermelon fruit is less in demand by the public and less to be utilized. In meat and skin / pulp
watermelon fruit is found a lot of substance citrulline. Citrulline is found more on the skin of
watermelon fruit which is about 60 percent of the meat.
This substance is found in all types of watermelon fruits and the highest content is the
yellow watermelon type. This citrulline substance will react with body enzymes when consumed,
then converted into arginine which is a non-essential amino acid that is efficacious for the heart,
circulatory system and immune system. The skin of watermelon fruit is also rich in vitamins,
minerals, enzymes and chlorophyll, which have many health benefits.
Watermelon fruit peel is also an example of waste that has not been utilized. Many people
do not know it yet and only consider watermelon skin is just unused waste and throw watermelon
skin away. In addition to consuming the fruit we can also consume it and can be used as a
foodstuff, one of which is crackers, crackers from watermelon skin as well as snacks of healthy
value and can also attract the attention of the public, especially young people.
1.2 PROBLEM FORMULATION

To produce snack products that appeal to the community made from processed waste

        Can add new insights and knowledge about the benefits of watermelon fruit skin and can
manage and utilize watermelon fruit skin waste to be used as food.

1.5 RESEARCH METHODS


        1. Information collection
A. Looking for locations that produce watermelon skin waste for raw materials crackers.
B. The benefits that will be obtained from the content of watermelon skin.
2. Find the information obtained to create a product by utilizing young people's snack taste
as a healthy food for the body.
3. Preparation of business support equipment
Stage after proposal approval
Once the proposal is approved, it will be
a. Making watermelon skin crackers
Crackers will be processed by themselves using a variety of simple equipment and raw
materials that are available.
b. Launching watermelon skin crackers
At this stage, each manufacturer will do the distribution of crackers around it. In
addition, the distribution of such products will be done on social media.
4. The production process of watermelon skin crackers
1. Preparation of tools and materials
Before doing a process of making watermelon skin crackers, it must be prepared in
advance all the tools and materials.
Here are the stages of preparation of tools and materials
a. Tool Preparation
1. Knife 5. Plastic 9. cutting board
2. Scales 6. Scoop 10. Sieve
3. Tray 7. Frying Pan
4. Basin 8. Stove and gas

b. Preparation of materials:
1. Watermelon Skin
2. Lime Water
3. Salt
4. Sugar
2. The process of making crackers from watermelon skin
1. Prepare watermelon skin that has been cut to size and wash thoroughly.
2. Make a lime solution by taking half a spoonful of the lime into 1 liter of water.
3. Soak watermelon skin in lime water solution for 20 minutes.
4. Make a saline solution by taking a spoonful of the salt and dissolved in
a liter of water.
5. Then soak the watermelon skin in a saline solution for 20 minutes.
               6. Make a sugar solution by taking 3 tablespoons of sugar and dissolved in one

liters of watermelon juice to get the original watermelon flavor.


7. Soak watermelon skin in sugar solution for 60 minutes.
8. Dry the watermelon skin until dry.
9. Fry the watermelon skin dry until brownish yellow.
10. Once the watermelon skin crackers start to turn yellow, remove from the
fry and drain.
11. After that we can also add a little chocolate flavoring to the flavored crackers
chocolate or a little refined sugar blended for original chips or seasonings
other condiments.
12. Put the crackers plus flavorings or other spices into the plastic.
13. Ready to be marketed.
5. Marketing System:
a. Product Promotion through exhibition activities, socialization and selling directly to
consumer.
B. Selection and arrangement of production premises so that the process of distributing
materials or products are easier and efficient.
C. Pricing based on the quality of the resulting product.
