TRONADOR
A boiling system must ensure:

1. Wort temperature: Boiling temperature as much as possible on


atmospheric pressure
» Give energy to the wort
» Be sure of an optimal homogeneity

2. Agitation : Enough
» Thermical (Strong evaporation)
» Mechanical

3. Evaporation : As low as possible


» Original gravity (?)
» Remove the atmosphere (vapour/air/others?)

4. Remove unwanted volatile compounds:


» Contact surface L-G: As much as possible
» Driving-off unwanted volatile compounds

5. Foam formation control
