What are fermentation and Concoction?

• It is a method that produces essential nutrients / amino acids for humans, animals, and
plants through the metabolism of microorganisms or mold.

• This process is used in making champagne, beer, and others

• Ingredients such as fruits, vegetables, and other organic materials mix with molasses,
brown sugar, or muscovado sugar
Process Flow

• Preparation of supplies and materials

• Weighing of fish

• Washing, chopping/cutting of fish (3-4 cut/ pc)

• Mixing (1 kg. of fish + 1kg. of molasses or Mixing of all fish trash, gills, and entrails in a plastic
pail using a wooden ladle)

Process Flow
