Fusion cooking produces food that is a combination of elements from different culinary traditions. T his can of course
happen naturally over time. T ake, for example, the Portuguese/Chinese fusion food that can be found in almost all the
eateries on the peninsula of Macau, situated just next to Hong Kong. T he Portuguese settled and ran the area for a
period of around 500 years. T he food and styles of the two cultures have, over time, fused and are now still being
enjoyed by residents and tourists alike.
Some fusions have become so popular that they take on the role of national dishes. T ake, for example, the famous
English fish and chips. T his is a combination of food styles from the Jewish people, the French and the Belgians.
Another odd fact is that the ’doner kebab’ as we know it did not originate in Istanbul (as you might expect) but in
Berlin after the influx of T urkish settlers moved there at the end of World War II.
More recently, restaurants have made efforts to create fusion foods based on their knowledge of food and their
customers’ tastes. When chefs get it right, fusion food can be an amazing, exciting experience of unexpected flavor
combinations with visually attractive plates that contain a variety of textures that are pleasing to the palate. It takes
a great deal of knowledge of the different styles of cooking involved and is very difficult to get right. T he chefs in
restaurants like these are usually from different countries or have spent time in various places learning about the
traditional cooking. It is a more ’scientific’ approach to inventing new dishes that seems to work very well.
Some cities, such as San Francisco, have become famous for creating fusions that both delight and insult food lovers
in equal measure. T his approach has certainly put them on the culinary map and the trend continues to spread. T he
city now has more of a fusion-based food scene than any other. In fact, pure/single origin restaurants are fairly rare in
the city.
