Cassava has become one of the sources of income in my barangay, people become creative in
producing their own kind of products with the use of cassava and one of the best kakanin that
cassava could offer is the cassava roll product because of its sweetness and availability in the
area.
Procedures:
1. Grate the cassava: Start by grating the cassava root to obtain the grated cassava. You
can use either fresh cassava or frozen grated cassava.
2. Squeeze out excess liquid: After grating the cassava, place it in a cheesecloth or
clean kitchen towel and squeeze out the excess liquid. This step helps remove the
moisture from the cassava and prevents the roll from being too wet.
3. Prepare the filling: You can choose various fillings for your cassava roll, such as
peanut, coconut, or cheese. Prepare the filling of your choice and set it aside.
4. Assemble the roll: Take a portion of the grated cassava and flatten it on a banana leaf
or parchment paper. Add the filling in the center and roll the cassava tightly around the
filling, just like a sushi roll.
5. Steam or bake the roll: Place the assembled cassava rolls in a steamer or bake them
in the oven until cooked. The cooking time may vary depending on the size and
thickness of the rolls.
6. Serve and enjoy: Once the cassava rolls are cooked, remove them from the steamer
or oven and let them cool slightly. Slice the rolls into smaller pieces and serve them as a
delicious snack or dessert.
Research is being conducted on cassava farming practices and their impacts on soil,
water, wildlife, pathogens, pests, and weeds. Additionally, there are initiatives to convert
cassava waste into value-added products to reduce environmental pollution.
It is essential to prioritize food safety and quality in cassava production. This includes
ensuring proper processing techniques to remove cyanogenic glycosides, which can be
toxic. By implementing appropriate farming practices and processing methods, cassava
roll production can be both environmentally safe and sustainable
