Classic Fried Rice

Ingredients (for 4-6 servings):


• 4 cups cooked and cooled rice (preferably day-old)

• 2 tablespoons vegetable oil

• 2 eggs, lightly beaten

• 1 cup mixed vegetables (such as peas, carrots, and corn)

• 1/2 cup diced onion

• 2 cloves garlic, minced

• 1 cup diced cooked protein (chicken, shrimp, ham, or tofu)

• 2-3 tablespoons soy sauce

• 1 teaspoon sesame oil

• 2 green onions, thinly sliced

• Salt and pepper to taste

Instructions:
1. Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.

2. Add the beaten eggs and scramble until just set. Remove from the pan and set aside.

3. Add the remaining oil to the pan. Once hot, add the diced onion and garlic. Sauté for 1-2
minutes until fragrant.

4. Add the mixed vegetables and cook for 2-3 minutes until they start to soften.

5. Increase heat to high and add the cooked rice. Stir-fry for 2-3 minutes, breaking up any
clumps.

6. Add the cooked protein and continue to stir-fry for another 2 minutes.

7. Pour in the soy sauce and sesame oil. Toss everything together to distribute the seasonings
evenly.

8. Add the scrambled eggs back to the pan and mix well.

9. Taste and adjust seasoning with salt and pepper if needed.

10. Stir in the sliced green onions.

11. Serve hot, garnished with additional green onions if desired.


Tips:
• Using day-old rice helps prevent the fried rice from becoming mushy.

• You can customize this recipe with your favorite vegetables or protein.

• For extra flavor, you can add a dash of oyster sauce or fish sauce.

• If you like spice, add some sriracha or chili oil at the end.
