Carrot Cookies Recipe

- 8 oz (225g) cream cheese, softened

- 1/2 cup (115g) unsalted butter, softened

- 2 cups (240g) powdered sugar, sifted

- 1 tsp vanilla extract

- Pinch of salt

Instructions:

1. In a large mixing bowl, beat the softened cream cheese and butter together using an electric

mixer on medium speed until smooth and creamy, about 2-3 minutes.

2. Add the sifted powdered sugar, 1 cup at a time, beating on low speed until the sugar is fully

incorporated and the mixture is smooth.

3. Add the vanilla extract and a pinch of salt. Beat on medium speed for an additional 2-3 minutes

until light and fluffy.

4. If the frosting is too thick, add a teaspoon of milk to thin it out to your desired consistency. If it is

too thin, add a little more powdered sugar until it reaches the desired thickness.

5. Use immediately to frost cakes, cupcakes, or cookies. Store any leftover frosting in an airtight

container in the refrigerator for up to 5 days.
