    Observed black buildup inside of the ice machine.


    Food contact surfaces must be cleaned as frequently as possible to prevent buildup. Ice machine has
    been turned off to be cleaned and sanitized.

    IN 2. Proper Cold Hold temperature (41 F/45 F)

    Chest freezer -2°F, upright freezer 4°F, upright fridge 34°F, prep cooler 36°F, and upright freezer -4°F.

    IN 3. Proper Hot Holding Temperature(135 F)

    Nacho cheese 151°F.

    Observed food products not properly date labeled inside of upright fridge.
    Food products must be date labeled to be discarded, within 7 days.

    Observed food products inside of the chest freezer not stored properly.
    Food products, in between use, must be stored in food grade containers, to prevent environmental
    contamination.

    OUT 39. Utensils, equipment, & linens; properly used, stored, dried, & handled

    Observed food debris buildup inside of the microwave. Clean in place equipment must be cleaned as
    frequently as possible, to prevent buildup.

    OUT 43. Adequate ventilation and lighting; designated areas used

    Observed light bulbs out in the kitchen refrigerators and in men’s restroom.
    Replace light bulbs, before the next inspection.

    Observed floors and walls needing to be cleaned in the kitchen. Observed baseboards detached from the
    wall in the kitchen and a door sweep needed at the back door. Observed water damaged and hanging
    ceiling tiles.
    Physical facilities must be maintained, cleaned, and in good repair.
    Attach baseboards, provide door sweep, and replace water damaged ceiling tiles, before the next
    inspection.
