IN 10. Food contact surfaces & returnables; Cleaned and sanitized at ppm/temp

Quaternary in sanitizer bucket in the kitchen and at the bar 200 ppm. Okay.
Dishwasher is sanitizing less than 50 ppm and has been serviced during my inspection.

COS 2. Proper Cold Hold temperature (41 F/45 F)

Pico 35°F, rice 43°F, brisket 47°F, turkey 44°F, jalapeño and shrimp 45°F, chicken 46°F, shrimp 48°F, beef
k-bob 34°F, red fish 38°F, prep cooler 32°F, Italian pepperoni 33°F, shredded cheese 38°F, Migali upright
fridge 38°F, macaroni and cheese 47°F, butternut squash 49°F, salsa 36°F, and beer walk in cooler 32°F.
Outdoor walk in cooler 39°F and outdoor walk in freezer-6°F,

Cold hold sensitive foods must be held at 41°F or below. Food products out of temperature have been
transferred to upright fridge that is holding the proper temperature.

IN 3. Proper Hot Holding Temperature(135 F)

Birria 140°F, grits 165°F, mashed potatoes 160°F, and chicken bozele 135°F.

OUT 27. Proper cooling method used; Equipment Adequate to Maintain Product Temp

Artic air cooler tempting greater than 43°F and food products inside are tempting at 45 to 48 °F.

Hoshizaki cooler tempting at 45°F. Food products have been removed from cooler. Neither cooler may be
used until they have been serviced and I return for a follow up inspection.

OUT 32. Food and Non-food Contact surfaces cleanable, properly designed, construct

Observed rusted shelving in the kitchen. Rust must be removed from shelving or shelving must be
replaced within 10 days.

1 Point Demerit
OUT 34. No Evidence of Insect contamination, rodent/other animals

Observed flys in the kitchen. The last extermination was on 8/13/24


Facility must continue to exterminate and eliminate as much as possible points of entry.

Observed cutting boards needing to be resurfaced in the kitchen. Observed utensils stored in water and a
sauce container being used as a scoop for food.

Cutting boards must be resurfaced or replaced before next inspection. Utensils must be stored clean and
dry in between use. Utensils may only be stored in water if the water is continuously running or
maintained at 135°F or higher.
Utensils used as scoops for food products must have handles.

OUT 42. Non-Food Contact Surfaces clean

Observed buildup on walk in cooler shelving and soda sprayer holder.

Non food contact surfaces must be cleaned and sanitized as frequently as necessary to prevent buildup.

OUT 43. Adequate ventilation and lighting; designated areas used

Observed light bulbs in fridge and freezers in the kitchen out.

Replace light bulbs, before next inspection.

OUT 45. Physical facilities installed, maintained, and clean

Observed walls of kitchen needing to be cleaned.

Physical facilities must be maintained, cleaned, and in good repair.

IN 47. Other Violations
