Target

It is a good idea to take extra care when storing and handling poultry and
game bird, as these meats are notorious for housing some of the bacteria that can
cause food poisoning.

This module provides information on proper storage of poultry and game bird.
Proper techniques in storing poultry were identified for you to follow and be guided
by the required storage of different poultry and game bird products to prolong its
shelf life.

After going through this module, you are expected to:

Techniques in Storing Poultry


Poultry may be frozen whole, in halves, cut into pieces, or parts after they are
dressed. Parts can be packed separately, ready to cook, or for easy meal preparation
and thawing.

Handling and Storage of Poultry

Poultry spoils very quickly unless it is properly handled and stored. It is


essential that proper handling and storage is used to ensure safety. You cannot see
the harmful bacteria present on the chicken. Salmonella is a bacteria that can cause
foodborne illness and is sometimes found on chicken.
After being brought home from the market, it should be unwrapped as quickly
as possible and wiped off with a damp cloth. Then it should be lightly covered with
waxed paper, placed in shallow utensils and stored in a cold part of the refrigerator
near the freezing unit or ice. Cooked poultry should be cooled as quickly as possible,
covered to prevent drying and refrigerated. Frozen poultry must be kept in the
freezing unit until it is thawed for cooking. Fresh or prepared poultry meat and
meals can be kept in a refrigerator or a freezer while following a few important
guidelines.

Safety practices in handling and storing poultry and game products

Storing fresh meat


The producers are obliged to label meat with storage and preparation instructions
which you should follow in order to make a tasty and healthy meal.
• Separate the raw poultry from other foods. Do not store fresh, raw poultry together
with other foods.
• Remove the poultry meat from the packaging and keep it in a covered plastic
container.
• Place the poultry in the coldest part of the refrigerator, on the bottom shelf.

Storing prepared meat


• Store the poultry meal leftovers in a refrigerator within two hours and consume
them within three days or else discard them.
• Keep the poultry meat in your home refrigerator at 4°C or 40°F.
• You can keep the prepared poultry meat in the freezer for 4 months.
• When freezing a prepared poultry meal, label the container with the date.
• Make sure the container is tightly closed.
• Cool down the food before freezing it.
• Keep the meat in your freezer at -18 °C.

Storing Poultry in the Refrigerator
• Bottom shelf for raw chicken
Store raw chicken or turkey in its original packaging, on the bottom shelf of
your fridge. Just make sure the packaging is well-sealed and away from other foods
and cooked meats. Double check that your fridge is set to 0-5°C. This keeps your
chicken – and all the food in your fridge – fresher for longer.

• It’s top shelf in the fridge for cooked chicken and turkey
If you’ve cooked too much chicken/turkey, or just want to store leftovers for
later, here’s how. After cooking, allow the chicken/turkey to cool, and within two
hours, wrap it well, then place it on the top shelf of your fridge. Keep cooked
chicken/turkey away from raw meat and use it up within two days.

Freezing and Thawing Poultry


To prepare poultry properly for freezing, it should be wrapped tightly in a
moisture-vapor proof film, foil or paper and then frozen at -170oC (0oF) or lower.
Although there are no abrupt changes in quality during the first few months of
poultry storage, it has always been a good practice to use these chickens first which
have been in storage longest and those with torn wrapper.

Thawing
• Put the deep-frozen poultry in a covered container and place it in the refrigerator
to thaw slowly.
• Do not thaw frozen meat at room temperature. Thaw it in the refrigerator, under
cold running water in the original packaging or in the microwave oven.
• Thawing time depends on the amount of meat.
• Always remember: you cannot refreeze raw meat after you have thawed it.

5 DONT’S OF STORING POULTRY

Here are the five don'ts of storing chicken; avoid these, and you will not only keep
the chicken fresher for longer, but you will also lower your risks of contracting a
salmonella infection:

1. Don’t leave it out at room temperature


Immediately after returning from the groceries, your priority should be placing the
chicken — and practically any meat — in a fridge or freezer. Never let the chicken
stay out at room temperature for too long; this may encourage bacteria's growth and
kickstart the spoilage process.

2. Don’t leave it in the fridge for too long


If you aren't cooking your chicken until much later, then opt for the freezer. For safe
eating, experts recommend storing chicken in the fridge for no more than two days
before cooking or transferring it to a freezer.

3. Don’t store it without an extra plastic wrap


Before placing your chicken in the fridge, ensure that it is tightly sealed to prevent
leakage of its juices. You can keep it in its original packaging, but an extra wrap will

still be required; for even more protection, you can then choose to place this in a
plastic bag.

4. Don’t store it in the top compartments of your fridge


One of the most commonly made mistakes when it comes to refrigerating raw chicken
is placing it on the top shelf. This will not only create a mess; it will heighten the risk
of cross-contamination as the chicken's juices may leak over other food items that
may not require cooking (e.g., fruits and vegetables). So never forget that storing raw
chicken in the fridge must be on the bottom shelf.

5. Don’t defrost chicken at room temperature


If you stored your chicken in the freezer, don't just drop it on your countertop to
defrost. Transfer it to a fridge where it'll slowly thaw to become ready for
consumption. This not only ensures the quality of its taste, but it also promotes safe
eating.
Tip: transfer your chicken to a fridge the day before you need it, and you'll have it
adequately thawed just in time for cooking!
