what i ate today as a vegan trying to take care of themselves but also not be miserable 😅
🫐 pb&'j' smoothie (not actually jam, just frozen berries)
🫘 chilli w quinoa for lunch
☕️ a hot drink (oolong) with some sweets to get me through a loooong editing day on the computer
🎃 roasted veg, grain, and greens bowl. my first walking-into-a-kitchen-that-smells-like-rosemary-and-squash of the season, so i'm happy about it 😌
breakfast this morning is my go-to smoothie: 🥛 2 cups soy milk 🍌 1 frozen banana ✨ 1 scoop protein powder (i’ve been using @bobsredmill vegan vanilla, it’s ok but nothing amazing) 🍫 1 tbsp dutch process cocoa powder 🥜 1 tbsp peanut butter 🍂 1 tbsp hemp hearts 🌾 1 tbsp ground flax seed you could probably add greens or coffee or whatever else — but it’s pretty decent on nutrients and also tastes good, so it’s the way i like to start my day. (and it’s just an easy meal to make from the stuff i always keep in my freezer!) 😌🙌
using up a bunch of leftovers to make up dinner tonight 😌🙌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ if you’re like me and trying to stay inside during flu season (no more for me thx) you’re probably looking to get the most out of your kitchen & pantry. i wrote about how i used up (almost) my entire pantry and rebuilt it up so that i could make something i really love every night. it makes dinners like these super quick to put together. ☺️🍳👌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ in this meal: cooked butternut squash, tofu scramble, black beans, pickled red cabbage, and greens. and, it could be “healthy”, but i’m using this as a dip for some tortilla chips for dinner tonight — i just crave them when i’m stuck in front of my computer for days on end.
