The reason the English language works this way is because while it is a Germanic language, for a very long time England was ruled by people who spoke Latin or a Romance language as their native language. Old English, for reasons debated by linguists and historians, didn't retain much Latin after the Anglo-Saxon settlement of Britain, but when the Normans took control they almost exclusively spoke an early form of French while the majority of the population still spoke Old English. Middle and Early Modern English incorporated a lot of Old French loanwords throughout their development, but those tended to be for things that were of interest to the upper/ruling classes (beef, pork, poultry, and mutton for types of meat) while the Germanic words were retained for things that were of interest to the working class (cow, pig, chicken, sheep for animals).

Despite English becoming the dominant language over time, these distinctions in vocabulary remained, probably in no small part due to Latin being the common language of European scholarship and its ecclesiastical use for centuries upon centuries. A Latin-heavy vocabulary has historically and continues to indicate that someone is highly educated and implies a certain amount of formality, while a Germanic-heavy vocabulary comes across as less stuffy because it's typically spoken in less formal settings.
